Fudgy Chocolate Brownies
Ingredients
- Butter, unsalted - 1/2 cup melted and HOT
- Oil, cooking - 1 tablespoon (olive oil or cocnut oil are fine)
- Sugar, super file - 1 1/8 cup (caster sugar or white granulated sugar)
- Eggs, large - 2
- Vanilla Extract - 2 teaspoons
- Flour, all-purpose - 1/2 cup (or plain flour)
- Coca Powder, unsweetened - 1/2 cup
- Salt - 1/4 teaspoon
Instructions
- Preheat oven to 175 degrees
- Lightly grease square baking pan
- Combine hot melted butter, oil and sugar together in a bowl. Whisk well for about a minute.
- Add eggs and vanilla, beat until lighter in colour (about another minute)
- Sift in flour, cocoa powder and salt
- Gentle fold the dry ingredients into the wet ingredients until JUST combioned (do NOT over beat)
- Pour batter into prepared pan, smoothing the top out evenly
- (Optional) Top with chocolate chunks or chocolate chips
- Bake for 20-25 minutes or until the center of the brownies in the pan no longer jiggles
- Remove and allow to cool to room temp
Notes
- Hot melted butter creates crackly tops
- Whisk butter and sugar really well
- Whisk eggs for a good minute, this is crucial for the crackly top
- Do not over beat batter once the flour and coca are added, it creates air in the batter which gives a cake-like texture
- Do not overbake, I like mine slightly uncooked even
